Routing for dummies on OSX question

Hi everyone!

I'm feeling like I'm using smth simple and stupid...

I got my CentOS server plus SoftEther VPN server installed on it.
Then I got VPN client installed on my OSX.
Client is connected: I see new interface named tap0 in ifconfig and Session Status is "Connection Completed (Session Established)".
Then I add an IP to tap0: sudo ipconfig set tap0 DHCP. Top0 interface now got an IP.

But what's next?

It's actually several questions:
1) what IP should I use for new default gateway for client machine? My server now has only two interfaces: lo and en0 (the internet connection), it does not have separate interface for VPN session...
2) I'd like to get old default interface/gateway and remember it, and be able to restore it after my vpnclient is down. how to do this?
3) can I manage all this from server's side as I got several OSX machines?
4) how can I get my session automatically try to get up and running after 'sudo vpnserver start' command?

PS: I would say that SoftEther VPN client OSX version is way more geeky then others, as others just work right after the installation without any routing table tricks. Why not to write some simple guide for OSX users?

As usual: I’d like to put all the client traffic to the vpn tunnel.

I recommend using OpenVPN client.

OpenVPN is blocked by my internet provide. I use Outline now. It's not SoftEther but simple, reliable and well explained at forums ;)

If your beginner, SecureNAT is an easy way but slow.
Please note that don't use localbridge and SecureNAT at the same time.
