UDP Support and SSL-VPN

I noticed that some ports with a lot of options in SSL-VPN always have two-digit even over 100 current connections.
Why are they more popular than the others?
It could mean that these ports are available to more users via more SSL options but I need more detailed explanation.
Furthermore, why are some ports without UDP Support (with a ' - ' logo )? Is there difference regarding security with and without UDP?
