tips for creating a remote supervision network

Hello everyone.
first of all I want to congratulate you on your project which is truly amazing.
I want to explain well the application I want to develop with softether:
we are a small Italian company that builds industrial machines. These machines are equipped with their own lan to connect various devices and systems to each other. the machines are equipped with a windows pc to be used as a VPN server.
in most cases the machines are connected to the client's network under firewalls and currently the connection to the VPN server is made via azure.
first question: since the remote machines do not need to be always connected to the supervisory system, what is the best way in your opinion to create this application without using azure?
second question: is it possible to host some sort of azure server in our home server in order to detach ourselves from the softether server? in other words, how can I make our own server for the VPN relay?
