If you use the default L2 Network connection:
On the (windows 10) client, in the advanced options of the profile:
tick "No Adjustments of Routing Table"
The open the properties of your VPN Ethernet adapter on the client. Open the properties of the ipv4 protocol, advanced settings.
uncheck automatic metric. Enter something like 500. Ok
A network adapter with a lower metric will have precendence. The route for the VPN is already on the VPN adapter. But without the change of the metric traffic for the internet might be still routed through the VPN. Therefore you should set the VPN adapter to a higher metric.
